Gigesa washing station, owned by the Yonis family, work closely with more than 500 local farmers in Danbi Uddo Kebele and nearby Shakiso in the Guji Zone of Ethiopia. Freshly picked coffee is delivered to Gigesa where the beans are removed from the fruit and fermented for 24-36 hours before being dried on traditional raised beds for 10-12 days and then being floated in fresh water to separate the lower quality beans before final processing.
