When we opened the first Matchstick cafe in 2012, Scott Rao's books were some of the only worthwhile writing on the subject of making coffee to have been published. Since then, many have contributed to the field but there remain very few publications that we would recommend. We continue to require  our coffee staff to read these books, and use Rao's vocabulary to teach core concepts. We consider them indispensable resources for baristi of all calibres.

Everything but Espresso covers the basics: extraction theory in depth and detailed discussion of different brew methods.
